IDK about bedrock edition as far as why it doesn't work at night: I know the villagers need to sleep every so often in order to spawn golems. so if you skip night immediately it will cause them to not spawn golems anymore.

Dunno if this helps, but villagers need to sleep for them to spawn iron golems. I'm not sure if something about unloading might interfere with this. You may need to wait for night. Make sure you're letting the day night cycle work and all that too. If all else fails, this might be worth investigating.

The detection range for the iron golem spawning req is not that big (hence the multi cell iron golem farms). Issue here is that the villagers are not breaking their line of don't with the zombie and aren't able to sleep.
