Gmc acadia thermostat recall.
I had the same issue on my 2017 which is/was unfortunately the thermostat/inlet pipe assembly AND the coolant temperature sensor having a poor connection. Even when it was "working" and A/C, etc. would work, oil temperature would be lower than normal. As someone else mentioned, its a $900 repair that is mostly labor.
