It is the optimal temperature for the car. If you run without a thermostat it would not let the car get up to operating temperature for a long while.

Put new Mopar thermostat in, and the JK still runs at 220 on average. Took JK to my other mechanic. He did some research and found that drilling a 1/8" hole in thermostat will allow Jeep to run cooler. Decided to drill hole. The Jeep is still running hot. About 220. Took the JK back to the dealer.

From what I can find the 3.6L V-6 takes a 203 degree thermostat.
